BACTERIOCIN: AS BIOPRESERVATIVE OF LIVESTOCK PRODUCTS

Abstract: Consumer demand more stable and safer product with longer shelf life. Biopreservation of livestock products is an alternative to control microbial deterioration and to meet safety standards. Bacteriocin has great potential to control undesirable bacteria in a food grade and natural manner in livestock products. Incorporation of natural antimicrobial substances like bacteriocin has resulted in enhanced shelf life of livestock products. In this review, bacteriocin as biopreservative of livestock products is discussed. |
